Authentic
Authentic Ethiopian cuisine, made daily with care and tradition. What makes a cuisine authentic is a mix of traditional ingredients, historical preparation methods, regional characteristics, and cultural memory. However, food historians, chefs, and scientists generally agree that authenticity is not a fixed, unchanging rulebook. Instead, it is a dynamic concept built on ingredient sourcing and flavor profiling. In other words, authenticity comes from the originality of your ingredients and the combination of ingredients that create a certain profile that could automatically be assigned to a specific region in the world. In the case of Ethiopian dishes, how Berbere is prepared, how butter is clarified, and how vegan dishes are prepared for the leniting seasons are crucial part of determining authenticity. For instance, adding clarified butter to Shiro would enhance the flavor of the Shiro but would not make it vegan. Therefore preparing Shiro with butter would not be considered as authentic. We at Ahadu make every effort to adhere to the traditional way of preparing our dishes.
